Looks like fun.
I see you're using just a lead head jig with what looks like a Gulp Camo Sandworm.
I have always used a Carolina rig for surf perch. 1/2 or 3/4 Oz. sliders.
Not bad sized perch. Make some good fish tacos.
My recipe for unbreaded fish tacos;
Ingredients
Couple lbs fish fillets, your choice, cut into 1''x 3'' pieces.
2 doz corn tortillas
1 oz pack of Lowerys or other premixed Taco seasoning.
Couple Tbsp lemon juice
1/4 cup olive oil
Salt to taste
Combine Taco seasoning, salt, lemon juice and enough olive oil to make a thin paste,
Add fish fillets stirring to thoroughly coat the fish.
Can be cooked right away but seems better if allowed to marinate for a while.
Place in dry none stick skillet over medium heat leaving space between pieces, the olive oil in the marinade should provide enough oil for cooking.
Fish should be firm and slightly transparent when done.
You don't want to burn the lemon juice.
Remember it's better to under cook it than over cook.
Lightly brush remainder of oil over Tortillas and heat in dry skillet one or two at a time until they pop.
Garnish as you like.
Quartered limes to squeeze over tacos is a nice touch.
I suggest very thin shredded red cabbage and Pico de Gallo with a Baja style sauce.
Taco sauce of your choice is optional.
Quick Baja sauce
8oz. sour cream or nonfat yogurt, drained. Note that yogurt will make a thinner sauce than sour cream.
4 oz mayonnaise
1/2 oz Lowerys taco seasoning or other chili seasoning.
1/4 cup very finely chopped fresh cellentro.
Mix ingredients and let stand for at least 1/2 hour in fridge.
